My only issue was I had a really hard time rolling up my logs.
I hate not measuring up to your beautiful pics!I make your Rugelach Pinwheels every year for the holidays and they are hands down my family and friends favorite cookies. They’re always a hit! mmmm.Such a treat…but only make them at Christmas….and still have to cut the recipe in half so we don’t have so many around. None left since everyone had to take some home.
I am taking your bossy comments to heart and getting to work in the kitchen immediately.Do you think you could make this without the cinnamon? As a diabetic I don’t want to lose my legs to the greatest nosh ever conceived. One more rugelach configuration: a classic “shnecken” or snail shaped rugelah. Also made your spicy tangy brisket for a Hanukah party. I have long wanted to try using the dough to make a savory appetizer, with a cheezy filling but have yet to try. It is very popular in Israel, commonly found in most cafes and bakeries. I almost threw it away and started over, but stuck with it and they were delicious. For me, the dough texture is no different from rugelach made in a stand mixer — it’s firmer, even, since you’re not whipping up very soft butter and cream cheese. For the dough, though, I’m loyal to Mollie Katzen’s. How have a missed tasting a rugelach in my long life? To me, pastry (unsweetened pastry especially) is tough and uninspiring when even slightly underbred, but cozy and swoony when it’s baked through.
The textures can be recreated, but earth balance and fake cream cheese do not provide the flavor that butter and real cream cheese do. Five!
I can’t help myself. I did see the note saying with food processor, ingredients don’t need to be warmed up, but the directions don’t really specify whether or not you’re processing cold butter/cream cheese.
it is your kryptonite … rugelach. Ugh. I sliced them up and they looked very nice on our christmas cookie plates. I’ve been making rugelach every Hannukah for years, but always kind of dread it because it is such a big job and mess.
Thank you for always having such infallible, special recipes. My mom made rugelach every year for Christmas.
I love the different shapes!
No matter how you blend it, the results will be incomparably flaky.Heat oven to 350 degrees F and line a couple baking sheets with parchment paper or nonstick baking mats.Stir cinnamon and sugar together in a small dish. I just kept flouring the counter and rolling pin.
My Jewish father-in-law says it’s his favorite besides his own mother’s (though I suspect if hers were available to try side by side, she might lose out; apostasy, I know).
I will absolutely make this again!Oh thank you for this.
I haven’t had Breads’ version, but Lee Lee’s is delicious. I am convinced they’re using a puffed pastry dough across the board. It firms up in the fridge. I keep trying different jams to see if they will not leak out so much.Deb, I have got to tell you, this post really hit home! Butter? Jeremy made his with apricot jam, nuts and currants. Looks amazing. I’ve been wanting to try making rugelach before but have been intimidated by its lengthy and intense process. how do you not eat an entire dessert item, such as Smitten is so prone to make so well!
The other 2 packets of dough are still in the fridge.I am glad I am not the only one who bakes so much she then doesn’t have the time/clean space/energy to cook dinner!Thank you for linking to your NYC list again! Thank you!PS: Also made your Potato Kugel (never made one before). I’m so jealous of all the comments from all you New Yorkers comparing bakeries. Here’s the link to the video (it’s in Hebrew but there’s translation)… let me know your thoughts and if you’re going to try the recipe!Another more traditional looking recipe I found that uses babka dough.
).Apple butter would be amazing in these.
I also did not want to leave 25 g of butter behind (UK, so butter is sold in 250g blocks), and used that, along with 150g of cream cheese (called soft cheese here for some reason), and 250g plain flour (about 10% protein). I made your version this morning and it was quite satisfying. Thank you x.I was very impressed by myself for making these cookies! I’d definitely discourage adding more flour. Once I was introduced to a chocolate-almond option (and stopped having to make the hideous and cruel choice between the two) I never went back…until we moved away from the neighborhood in Brooklyn that had the best ones.
Bonus: It’s the simplest thing since rolled dough.
HUGE amount of leakage which resulted in me tearing a bunch of the cookies because the jam dried into a hard sticky sheet. Bake the rugelach … I am going to use your technique…which will take so much less time. Dough chilled, quartered, rolled, cut into 2″ squares and topped with a tiny bit of jam before being folded over and baked.
Your are the best!Deb, excuse my lack of knowledge on rugelach… is this similar to delcos? After a couple of batches, these became super-easy to make. – and I agree that rugelach is pretty foolproof. Did you use more dough? Thank you for making the dough so easy to make. I especially making wedges and rolling. Serve warm or at room temperature. You might want to check out the, will you please convince everyone i know that it’s finally time to buy me a food processor for christmas this year, if only for this beauty? The dough was cold and I kept the rest in the refrig until I was ready to roll and shape. As you said, they taste good.
It’s not pretty and neat as in your pictures.
They tasted delicious, but were a bit messy looking.
Usually I roll and slice them. Or any other ideas? I used almonds and currants — no chocolate — and I think a tad more raspberry jam than suggested.
).Okay, I’m a convert. For cream cheese a similar process but leave it in the sealed foil and aprox.
room temp butter!
